Carefully sauteed Awaji Island produce, condensed for a sweet Awaji beef taste, and interwoven spices complete the image of Marufuji's special move "Shiranui".

Collaboration between "Shiranui" and "Awaji Island Curry".

Marufuji has enthralled fans with his brilliant technique "Shiranui". As a "big curry lover" Marufuji carefully selected the Awaji Island onions that he came across while passing through the area during a tour.

"Awaji Island curry" is the rich taste of carefully selected ingredients blended together. The main feature is first tasting the "sweetness" of the onions and the fruits, and then the chicken stock and demi-glace* sauce, and finally the spices.

1. The secret of the sweetness
Compared to normal onions, there is more than two times the sweetness (almost the same as a pear in sugar content).
Saute the "Awaji Island" onion slowly for four hours until it turns into a candy color, and use one piece per dish. In addition add to this nine kinds of fruit including apple, banana, mango, papaya to bring out the sweetness.

2. The secret of making it deep and rich
By combining the chicken stock, the chicken soup and the vegetable soup from Awaji Island, and even a specially blended demi-glace sauce, it produces a high quality deep rich sauce which is different from the taste of homemade curry.

3. The secret pain
As well as specially selected peppers, more than sixteen kinds of spices, including tumeric, coriander, cumin, and fenugreek. There is a special formulatuon of spices and the order in which they are used. The completed curry falls into three steps, "sweetness, richness and spicyness".

"Awaji Island curry" is carefully made in the factory on Awaji Island, produced with the NPO coporation of the Awaji Island Promotion of Activation committee. We developed the "taste that enhances in three steps" and by sticking to the order and formulation, we have produced the taste that will change in the order of sweetness, richness and heat.
